This slicing knife from our Prochef Collection, has an 11-3/4" hollow edge blade, full tang, with a triple riveted POM handle.
The hollow (or granton) edge blade prevents meat from shedding and tearing, or sticking to the blade, so it produces impeccable slices. This knife is the tool of choice for slicing ham, turkey, beef, fish, large charcuterie and other meats that are clingy, and often catch onto the blade.
Handle is available in two colors: black (for general use, including poultry and beef) and blue (for fish).
