7" fillet knife in MV stainless steel, from our Prochef Collection, has a comfortable black PP synthetic handle.
This knife is the tool of choice for cutting small steaks (center cut type), fish fillets and chicken steaks.
Molybdenum Vanadium stainless steel blade has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Hardness is 54-56 RC.
Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.

Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
