This boning knife from our Prochef Collection has a 7-7/8" blade and a comfortable and durable PP handle.
This mid-size boning knife effortlessly scrapes the last bit of meat, chicken, lamb or fish from the bone. A good option for a home kitchen, restaurant or food preparation facility.
Blade made of Molybdenum Vanadium stainless steel blade has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 7-7/8" long and 1/8" thick. Hardness is 54-56 RC. Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.

Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
