This small boning knife is good for effortlessly scraping the last bit of meat, chicken, lamb or fish from the bone.
Good for restaurant and home kitchens, and for food processing facilities.
Blade made of Molybdenum Vanadium stainless steel that has been tempered at 1900°F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 5-1/8" long and 1/8" thick. Hardness is 54-56 RC. Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.
