This slicing knife is excellent at thinly slicing fish fillets, smoked salmon, or large fish. A welcome addition to any professional kitchen or food processing facility.
Blade made of Molybdenum Vanadium stainless steel that has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 11-3/4" long and 1/8" thick. Hardness is 54-56 RC. Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.
