This slicing knife from our Prochef Collection has an 11-3/4" blade and comfortable and durable black PP handle.
This slicing knife is the tool of choice for slicing ham, roast beef and large charcuterie.
Good for restaurant and home kitchens, and for food preparation facilities.
Blade made of Molybdenum Vanadium stainless steel that has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 11-3/4" long and 1/8" thick. Hardness is 54-56 RC. Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.

Dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
