This butcher knife from our Prochef Collection has an 11-3/4" blade and a comfortable and durable yellow PP handle with a front guard that protects hand from any slippage.
This type of knife is used throughout the world in the meat processing trade, as the heftier blade is specially designed for splitting, stripping and cutting meat. Considering that HACCP has assigned the yellow color to the handling of poultry, this knife is the right option for processing this kind of meat.

Blade made of Molybdenum Vanadium stainless steel, is 11-3/4" long and 1/8" (3 mm) thick. Its blade has been tempered at 1900°F using precision Swiss equipment, for better sharpness and rust resistance. Hardness is 54-56 RC.
Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.
Limited lifetime manufacturer's warranty.

Dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
