This large slicing knife from our Probig Collection, has a blade with a hollow edge and PP handle, which is comfortable and durable.
The hollow (or granton) edge prevents the food from sticking to the blade by creating a slight separation between the food and blade surfaces.
The HACCP has assigned the color blue to the exclusive handling of fish or seafood.
This extra-long knife is the tool of choice for cutting pieces or slices of a big fish, like salmon or tuna. It is the right tool for a restaurant kitchen, fishery or supermarket, where you need to process fish every day.
There are two sizes available (blade length): 15-3/4" and 17-3/4".
Blade made of Molybdenum Vanadium stainless steel blade that has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 15-3/4" or 17-3/4" long and 1/8" thick; and hardness is 54-56 RC. Item weighs 7.5 or 8.5 oz, depending on length.
Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.

Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
