This boning knife from our Master Collection has a 5-7/8" blade and a durable POM handle, triple riveted.
This small-size knife is excellent for deboning poultry, pork or beef, and is comfortable for everyday use. You will be pleased with its professional performance.

Blade made of Molybdenum Vanadium stainless steel that has been tempered at 1900°F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 5-7/8" and 3/32" thick. Hardness is 54-56 RC. Handle is made of Polyoxymethylene (POM), a strong synthetic polymer with excellent dimensional stability.
