2-3/8" peeling knife from our Master Collection, has a curved MV stainless steel blade, and a triple riveted, black POM handle.
The shape of the blade makes it easy to peel potatoes, vegetables and fruits.
It is also practical for preparing decorative garnishes or removing dark spots from vegetables.
Molybdenum Vanadium stainless steel blade has been tempered at 1900°F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 2-3/8" long and 3/32" thick. Hardness is 54-56 RC. Handle is made of Polyoxymethylene (POM), a strong synthetic polymer with excellent dimensional stability.

Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
