This butcher knife from our Probig Collection has a 13-3/4" blade and a durable blue PP handle.
The HACCP has assigned the color blue to the exclusive handling of fish or seafood.
This is a very useful, versatile knife that will work with larger pieces of fish, like tuna, swordfish and others. Tool of the trade for fisheries.
Blade made of Molybdenum Vanadium stainless steel that has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 13-3/4" long and 1/8" thick. Hardness is 54-56 RC. Handle is made in Polypropylene (PP), a strong plastic that remains stable up to 320°F.

Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
