This fish slicing knife from our Master Collection, has an 11-3/4" hollow edge blade with hard Titanium coating, full tang, with a triple riveted POM handle.
The hollow (or granton) edge blade prevents fish from shedding and tearing, or sticking to the blade, so it produces impeccable salmon slices. This knife is the tool of choice for slicing salmon, tuna, sword fish and other meats that are clingy, and often catch onto the blade.
This knife is a good option for a professional or home kitchen, fisheries and food processing facilities.
Blade is made of Molybdenum Vanadium stainless steel with an Aluminum Titanium Nitride coating (PVD method) which improves hardness, gives a high temperature stability (1,600 °F) and has a beautiful gray-black color. It has 11-3/4" long, 3/32" thick and 55-57 RC hardness. Item weighs 6.0 oz. Handle is made of Polyoxymethylene (POM), a highly resistant and stable synthetic polymer, which is comfortable and durable.
