This slicing knife from our Prochef Collection has a 11-3/4" blade and a comfortable POM handle, triple riveted.
This large knife is the tool of choice for breaking down large meat carcasses and slicing ham, roast beef and large charcuterie.
It will also add a touch of color to your kitchen.
Molybdenum Vanadium stainless steel blade has been tempered at 1900°F using precision Swiss equipment, for better sharpness and rust resistance. Blade is 11-3/4" long and 1/8" (3 mm) thick. Hardness is 54-56 RC. Handle is made of Polyoxymethylene (POM), a strong synthetic polymer with excellent dimensional stability.

Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
