This excellent knife is well suited for boning and butchering small fine meats, such as filet mignon, and charcuterie. Good for professional kitchens, like restaurants and hotels, and home kitchens.

Blade made of Molybdenum Vanadium stainless steel is 5-7/8" long and 3/32" (3 mm) thick. It has 53-56 RC hardness. Handle is made of Polyoxymethylene (POM), a high resistance and stable synthetic polymer.

Knife is corrosion resistant and dishwasher safe, however, for lasting sharpness, a quick dry with soft cloth is recommended immediately after washing.
