This large knife has a 11-3/4" forged blade, full tang, with a triple riveted POM handle, which is comfortable and durable.
This kind of knife is intended to slice and cut charcuterie, like ham, salami, prosciutto and pepperoni, and big chunks of cheese. It's the right tool for a charcuterie shop, restaurant kitchens, supermarkets and food processing facilities.
Blade is made of Molybdenum Vanadium stainless steel, precision stamped and forged, and is 11-3/4" long and 3/32" (2 mm) thick. It's full tang, which means that it is a continuous piece of steel up to the handle's end. This design gives the maximum strength to the knife. It has 53-56 RC hardness, which ensures a long-lasting sharpness.
Handle is made of Polyoxymethylene (POM), a highly resistant and stable synthetic polymer.

Knife is corrosion resistant and dishwasher safe, however, for lasting sharpness, a quick dry with soft cloth is recommended immediately after washing.
