This mid-size butcher knife from our Professional Collection, has a curved 9-7/8" blade and a comfortable and durable black PP handle.
This versatile butcher knife is specifically designed for slicing beef and large charcuterie. Very good choice for professional kitchens, meat packing facilities and supermarkets.
Blade made of AISI 420 high carbon stainless steel (12% chromium), is 9-7/8" long and 1/8" thick (3 mm). It has a 50 RC hardness which ensures long lasting sharpness. Handle is made of Polypropylene (PP), a strong plastic that remains stable up to 320°F.

Knife is dishwasher safe, however, drying with a soft cloth immediately after machine or handwashing is recommended in order to maintain sharpness.
