This butcher knife from our Professional Collection has a 10-7/8" blade in high carbon stainless steel and a comfortable and durable PP handle.

This butcher knife is the tool of choice for breaking down large carcasses, and slicing roast beef and large charcuterie.

An excellent choice for professional kitchens, meat packing facilities and supermarkets.

AISI 420 high carbon stainless steel (12% chromium) blade is 10-7/8" long, 1/8" thick (3 mm), and has a 50 RC hardness that ensures a long-lasting sharpness. Handle is made of Polypropylene (PP), a strong plastic that remains stable up to 320 °F.
