This slicing knife from our Probig Collection, has a 13-3/4" hollow edge blade, full tang, with a triple riveted PP plastic handle.
The hollow (or granton) edge blade prevents from shedding and tearing, or sticking to the blade, so it produces impeccable slices. This knife is the tool of choice for slicing ham, turkey, beef, fish, large charcuterie and other meats that are clingy, and often catch onto the blade.
This large knife is a good option for professional kitchens, butcheries, fisheries and food processing facilities.
Blade made of Molybdenum Vanadium stainless steel that has been tempered at 1900°F using precision Swiss equipment, for better sharpness and rust resistance. It has 13-3/4" long, 3/32" thick and 54-56 RC hardness. Item weighs 7.0 oz. Handle is made of Polypropylene (PP), a strong plastic that remains stable up to 320°F, has a good grip and is comfortable.

Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or handwashing is recommended.
