This German design butchering knife has an 8-7/8" precision stamped and forged blade, full tang; and it has a comfortable POM handle, a synthetic polymer, triple riveted.
This mid-size knife can perform most butchering tasks, like cutting large pieces of meat or fish, or portioning chicken or turkey. Blade is big and heavy enough for cutting easily through small bones and cartilages.
This knife is a good choice for butcheries, fisheries, restaurant kitchens, food processing facilities and also home cooks that prefer to butcher their meat personally.
Blade made of 8-7/8" Molybdenum Vanadium stainless steel, is 8-7/8" long and 3/32" (3 mm) thick. Blade has 53-56 RC hardness. Handle is made of Polyoxymethylene (POM), a high resistance and stable synthetic polymer.

Knife is corrosion resistant and dishwasher safe, however, for lasting sharpness, a quick dry with soft cloth is recommended immediately after washing.
