This French design peeling knife has a 3-7/8" precision stamped and forged blade, full tang, with an extended steel bolster for hand protection and a durable POM synthetic handle, triple riveted.

This kind of knife is specifically designed for peeling or shaping any vegetable or fruit, although it can also be used for cutting small pieces of any meat. Good for a food processing facility, restaurant or home kitchen. This is one of the top-quality products in this catalog.
