This French classical design knife, with its 11-3/4" long, forged and narrow blade, is the right tool for filleting, slicing and carving turkey, salmon, ham, or other kind of meat, effortless and with high precision. This knife is wider and thicker than the typical slicing knife, so you have better control when cutting a firm or big piece of meat; and you can also use it as a big utility knife. In addition, it has a steel bolster for protecting hand, and a triple riveted POM synthetic handle.
This knife is an excellent choice for chefs and serious cooks at home, butchers and charcutiers.
Blade made of Molybdenum Vanadium stainless steel, precision stamped and forged, is 11-3/4" long and 1/8" (4 mm) thick. It has 53-56 RC hardness, which ensures a long-lasting sharpness. Item weighs 7.5 oz. Handle is made of Polyoxymethylene (POM), a highly resistant and stable synthetic polymer.

Knife is corrosion resistant and dishwasher safe, however, for lasting sharpness, a quick dry with soft cloth is recommended immediately after washing.
