This slicing knife from our Professional Collection, has a trailing point style blade of 9-7/8" long and a durable red PP handle.
This knife is the tool of choice for slicing any meat and large charcuterie. Because of the narrow blade it's ideal for deboning large pieces of carcasses. Excellent choice for professional kitchens, meat packing facilities and supermarkets.
Bade made of AISI 420 high carbon stainless steel (12% chromium) is 9-7/8" long and 1/16" thick (2 mm). It has a 50 RC hardness which ensures a long-lasting sharpness. Item weighs 5.9 oz. Handle is made of Polypropylene (PP), a strong plastic that remains stable up to 320°F.
